INGREDIENTS

Banana-Infused Tequila:
Yield: 750 milliliters
One 750-mililiter bottle blanco tequila
Ripe bananas

To Assemble and Serve:
Yield: 1 cocktail
¾ ounce Tempus Fugit crème de banane
¼ ounce wildflower honey
¼ ounce Hamilton dram
5 dashes cold pressed yuzu
2 dashes MSG tincture
Juice of 1 lime
1 lime leaf
Grated nutmeg
Bee pollen
Chamomile salt

METHOD

For the Banana-Infused Tequila:
In a nonreactive container, combine tequila and desired amount bananas. Cover and let sit 4 days. Strain, bottle, and reserve.

To Assemble and Serve:
In a shaker with ice, combine crème de banane, honey, dram, yuzu, tincture, lime juice, lime leaf, and 1¾ ounces Banana-Infused Tequila. Wet shake and strain into a rocks glass with 1 large ice cube. Dust with nutmeg, bee pollen, and salt.
