Ham and Cheesy
Black Forest Ham, Dijonnaise, Havarti, Mixed Greens, Ponzu, Sesame Focaccia

INGREDIENTS
Sesame Focaccia:
7 grams active dry yeast
55 grams extra virgin olive oil
20 grams honey
1.1 kilograms 00 flour
40 grams kosher salt
Dijonnaise:
75 grams roasted garlic, chopped
75 grams chopped scallions
75 grams Dijon mustard
30 grams whole grain mustard
1 tablespoon ground black pepper
650 grams mayonnaise
To Assemble and Serve:
Yield: 1 sandwich
1 cup mixed greens
1 tablespoon ponzu
Kosher salt
5 ounces thinly sliced Black Forest ham
1½ ounces sliced havarti
METHOD
For the Sesame Focaccia:
In a large, nonreactive container, combine yeast and 850 grams water. Whisk 1 minute, or until yeast is fully dissolved. Add 25 grams oil and honey. Mix until fully incorporated. Add flour. Using gloved hands, mix until a shaggy dough forms. Add salt and knead additional 3 minutes, or until elastic and smooth. Cover and refrigerate 24 hours. The next day, liberally grease an 18-inch sheet tray with remaining 30 grams oil. Remove dough from refrigerator and place on oiled sheet tray. Using gloved hands, spread to edges until dough pushes back. Let sit 2 hours at room temperature, or until dough fully stretches to edges. Heat oven to 450°F. Bake 20 minutes, or until golden brown. Transfer to a wire rack and let cool.
For the Dijonnaise:
In a food processor, pulse to combine garlic and scallions until a paste-like consistency is achieved. Add mustards and pepper. Mix until just combined. Add mayonnaise and process until smooth. Transfer to an airtight container and refrigerate.
To Assemble and Serve:
In a mixing bowl, toss greens with ponzu. Season with salt. Set aside. On a clean work surface, slice Sesame Focaccia horizontally to create 2 open-face pieces. Generously spread 1 tablespoon Dijonnaise on each side. On bottom half, layer ham, cheese, and dressed greens. Close sandwich. Slice in half and serve.
