Capicola Sandwich

Salami, Capocollo, 'Nduja, Provolone, Arugula, Focaccia

INGREDIENTS

Arugula
Extra virgin olive oil
Focaccia, halved
1 tablespoon ‘nduja
Thinly sliced capocollo
Thinly sliced salami
Sliced provolone

METHOD

In a mixing bowl, toss arugula with desired amount olive oil to coat. Set aside. Place focaccia on a clean work surface. Spread ‘nduja on the top half and set aside. On the bottom half, layer meats, provolone, tapenade, dressed arugula, and artichoke hearts. Close sandwich and serve.
