These entrepreneurs founded Acres in 2017 and besides proffering delicious, technically sublime pastry, they have a point of view.

It’s Saturday morning in Seattle and the ladies of Acres Baking Co. are setting up at the farmers market—we met them at Magnolia Farmers Market, but they’ve also appeared at the West Seattle Night Market.

First, the tablecloth then the glass cases protecting the jam bars, financiers, and scones comes out. As you make your way down the table you’ll happen upon a translucent dome protecting fluffy, sugar dusted school buns and a tray of savory whole grain, squash focaccia bread. Keeping all their ingredients both local (including their flours) and seasonal, Bakers Randi Rachlow and Nina Gruber are combining their professional experience and training with a little Nordic heritage, and passion to share their pastry.
