INGREDIENTS

1 ounce gin
Fresh basil
Fresh mint
1 ounce blanc vermouth
3 ounces clarified watermelon juice
¾ ounce lime oleo saccharum
½ ounce 10% acid solution
1 dash 10% saline solution
Watermelon sphere

METHOD

In a blender, add gin and desired amount basil and mint. Blend 15 seconds on high speed. Stir in remaining ingredients. Pass through a coffee filter until liquid runs clear. Transfer to a carbonation rig and carbonate to desired PSI. Refrigerate until chilled. Pour into a Collins glass. Garnish with watermelon sphere and serve.
