INGREDIENTS
Lime Oleo Saccharum:
Yield: 1 quart
500 grams granulated sugar
50 grams lime peels
15 grams makrut lime leaves
33 grams citric acid
16½ grams malic acid
4½ grams tartaric acid
4½ grams succinic acid
To Assemble and Serve:
Yield: 1 cocktail
1¾ ounces gin
½ ounce pamplemousse liqueur
¼ ounce grapefruit juice
2 barspoons simple syrup
1½ ounces rainbow sherbet

METHOD
For the Lime Oleo Saccharum:
In a vacuum bag, add sugar, lime peels, and makrut lime leaves. Seal and let sit 72 hours at room temperature. In a pot over medium-high heat, bring 500 milliliters water to a boil. Add cured mixture and stir until sugar has fully dissolved. Stir in acids. Strain, bottle, and reserve.
To Assemble and Serve:
In a shaker with ice, add gin, liqueur, grapefruit juice, simple syrup, and ½ ounce Lime Oleo Saccharum. Shake and strain into a Collins glass with crushed ice. Top with beer. Garnish with grapefruit wheel.
