INGREDIENTS
Sweet Chile Dressing:
6 tablespoons Thai sweet chile sauce
2 tablespoons fish sauce
2 tablespoons lime juice
Chicken Rub:
Yield: 2 cups
12 tablespoons ground black pepper
12 tablespoons Cajun seafood boil spice
3 tablespoons granulated garlic
3 tablespoons granulated chicken bouillon
7½ teaspoons kosher salt
Smoked Chicken:
4 chicken thighs
To Assemble and Serve:
8 ounces shredded white cabbage
1 cup halved Roma tomatoes
2 cucumbers, sliced
16 ounces Fresh Origins TenderGreens™ Asian Salad
½ cup Fresh Origins Micro Cilantro
½ cup Fresh Origins Micro Mint
½ cup Fresh Origins Micro Thai Basil
1 Asian pear, sliced
½ cup fried shallots
METHOD
For the Sweet Chile Dressing:
In a mixing bowl, whisk to combine all ingredients. Set aside.
For the Chicken Rub:
In a mixing bowl, combine all ingredients. Set aside.
For the Smoked Chicken:
Prepare and heat a smoker to 225°F with post oak wood. On a clean work surface, pat chicken dry. Transfer to a sheet tray. Season each side with 1 teaspoon Chicken Rub. Smoke 1½ hours, or until chicken reaches 165°F internal temperature. Let cool slightly, then slice to desired thickness. Set aside.
To Assemble and Serve:
In a mixing bowl, combine cabbage, tomatoes, cucumbers, Fresh Origins TenderGreens™ Asian Salad, Fresh Origins Micro Cilantro, Fresh Origins Micro Mint, Fresh Origins Micro Thai Basil, and 2 tablespoons Sweet Chile Dressing. Toss to evenly coat. Transfer to a serving bowl. Top with Smoked Chicken. Finish with pear and shallots. Serve with additional ramekin Sweet Chile Dressing.
