Tequila Blanco, Grapefruit Soda, Whipped Grapefruit, Lime Juice, Agave, Saline, Salted Grapefruit

INGREDIENTS

Fluffy Grapefruit:
Yield: 1 liter
750 milliliters ruby red grapefruit juice
1 teaspoon xanthan gum

To Assemble and Serve:
Yield: 1 cocktail
2 ounces tequila blanco
½ ounce lime juice
¼ ounce agave syrup
4 drops saline solution
Squirt grapefruit soda
Salted grapefruit triangle
Grapefruit oil

METHOD

For the Fluffy Grapefruit:
In a mixing bowl, whisk to combine all ingredients until whipped texture is achieved. Set aside.

To Assemble and Serve:
In a mixing glass with ice, add tequila, lime, agave, saline, and 2 ounces Whipped Grapefruit. Stir until chilled. Strain into a chilled Collin glass. Top with grapefruit soda. Garnish with salted grapefruit. Spritz grapefruit triangle with grapefruit oil and char with a blow torch.
