Pepperoni Negroni

Pepperoni-Infused Gin, Sweet Vermouth, Campari

INGREDIENTS

Pepperoni-Infused Gin:
Yield: 1 liter
1 liter gin
175 grams rendered pepperoni fat

To Assemble and Serve:
Yield: 1 cocktail
1 ounce Dolin Rouge vermouth
¾ ounce Campari
Rich simple syrup
Orange twist

METHOD

For the Pepperoni-Infused Gin:
In a large nonreactive container, combine all ingredients. Freeze overnight. The next day, strain, bottle, and reserve.

To Assemble and Serve:
In a mixing glass with ice, combine vermouth, Campari, 1½ ounces Pepperoni-Infused Gin, and 1 barspoon simple syrup; stir. Strain into a rock glass with ice. Garnish with an orange twist.
