Glazed Lobster
Yellow Curry, Baby Zucchini, Fresh Origins Micro Lemon Basil

For this dish, I wanted to showcase the baby zucchini, which have a great texture. The squashes are super tender and fresh, and the sauce provides some acidity and depth. Basil, which is indigenous to India, elevates the floral and citrus tones — a great, light summer curry.

INGREDIENTS
Yellow Curry Sauce:
25 grams coconut oil
50 grams chopped onions
10 grams chopped garlic
10 grams chopped ginger
15 grams curry powder
200 grams grilled yellow tomatoes
100 grams coconut milk
5 grams kosher salt
Glazed Lobster:
Kosher salt
Lobster tails
Butter
Lemon juice
To Assemble and Serve:
Yield: 1 serving

METHOD
For the Yellow Curry Sauce:
In a sauté pan over medium flame, heat coconut oil. Add onions, garlic, and ginger. Sauté until slightly caramelized. Add curry powder and cook 1 minute. Add tomatoes and coconut milk. Bring mixture to a boil. Transfer to a Vitamix Commercial blender and blend until smooth. Season with salt. Transfer to an airtight container and refrigerate.
For the Glazed Lobster:
Bring a large pot of salted water to a boil. Add lobster and poach until cooked through. Let cool. Once cooled, pick meat from shells. Transfer to a sauté pan over medium heat. Season with butter and lemon juice. Cook until warmed through and evenly coated. Season with salt. Remove from heat and set aside.
To Assemble and Serve:
In a small saucepan over low flame, heat Yellow Curry Sauce. Keep warm. In a sauté pan over medium heat, add Fresh Origins Tiny Veggies™ Squash. Cook until fork-tender. Season with butter and lemon juice. Stir until evenly coated. Remove from heat and set aside. Spoon warmed Yellow Curry Sauce onto a serving plate. Top with Glazed Lobster and Fresh Origins Tiny Veggies™ Squash. Season with lemon juice. Garnish with Fresh Origins Micro Lemon Basil.
