Honey Walnut Wings

INGREDIENTS

Chicken Wings:
5 pounds chicken wings, separated into drums and flats
¼ cup kosher salt
1 tablespoon granulated sugar
1 teaspoon MSG

Sauce:
2 egg yolks
1 clove garlic
1 teaspoon Dijon mustard
2 cups neutral oil
1 can sweetened condensed milk
¼ cup honey
2 tablespoons rice vinegar
1 teaspoon MSG
Kosher salt

Candied Walnuts:
1 cup granulated sugar
1 cup walnuts

Puffed Rice:
Short-grain white rice
Neutral oil

To Assemble and Serve:
Oil for frying
2 cups cornstarch
Thinly sliced scallions

METHOD

For the Chicken Wings:
In a large mixing bowl, combine wings, salt, sugar, and MSG. Toss to coat evenly. Cover and refrigerate 2 hours. 

For the Sauce:
In a food processor, combine egg yolks, garlic, and Dijon mustard. With the motor running, slowly stream in oil until mixture is fully emulsified. Add condensed milk, honey, vinegar, and MSG. Process until smooth. Season with salt. Transfer to an airtight container and reserve.

For the Candied Walnuts:
In a saucepan over medium-high heat, bring sugar and 1 cup water to a boil. Add walnuts and let simmer 5 minutes. Strain and spread walnuts on a parchment-lined sheet tray. Let cool.

For the Puffed Rice:
Heat a dehydrator to 175°F. Bring a pot of water to a boil. Add rice and cook until tender. Drain and rinse under cold water. Transfer to a parchment-lined sheet tray. Dehydrate until rice is completely dried out. In a heavy-bottomed pan, heat oil to 375°F. Add dried rice to hot oil and fry 2 seconds. Using a slotted spoon, remove rice from oil and transfer to a paper towel-lined plate. Let drain. 

To Assemble and Serve:
In a deep fryer, heat oil to 350°F. Place cornstarch in a shallow container. Dredge Chicken Wings in cornstarch then fry until golden brown and crisp. Transfer to a wire rack and let drain. Once cooled, transfer fried Chicken Wings to a large mixing bowl. Toss with desired amount Sauce until evenly coated. Transfer to a serving plate. Top with desired amount Candied Walnuts, Puffed Rice, and scallions.
