Bacon-Egg-Cheese Bagel

INGREDIENTS

Thick-cut bacon
2 eggs
Kosher salt
Half-and-half
1 tablespoon butter
Toasted cheddar bagel, sliced
Cracked black pepper
Flaky sea salt
Thinly sliced chives

METHOD

Heat oven to 350°F. Place bacon on an aluminum foil-lined sheet tray and cook until deep golden brown and crisp. Let cool. Once cooled, dice into bite-size pieces. Set aside. In a mixing bowl, whisk eggs. Season with salt and half-and-half. In a skillet over medium heat, melt butter. Add whisked eggs and cook until eggs are 75-percent cooked through, stirring gently. Fold in bacon. Once well incorporated, fold in cheese. Remove from heat and let eggs finish cooking off heat. Transfer to bottom half of bagel. Finish with pepper, sea salt, and chives. Close sandwich and serve.
