Victor Rosado was born and raised in Puerto Rico, where early memories of family meals and wood-fired cooking with his grandparents sparked his passion for food. He earned a bachelor’s degree in culinary science and an associate degree in culinary arts, and began his professional career under the guidance of Chef Juan Carlos Vicens. Rosado started at The Breakers Palm Beach before returning home to cook under Chef Dayn Smith at Perla, a fine dining seafood restaurant that introduced him to refined coastal cuisine.

Rosado eventually joined Jean-Georges Vongerichten’s Fern in Puerto Rico, rising to sous chef, and later became chef de cuisine at José Andrés’ Mi Casa at the Ritz-Carlton Reserve. During his five years with Andrés, he helped launch major openings and contributed to World Central Kitchen’s relief efforts— an experience that reinforced his belief in food’s power to nourish and unite.

In 2017, Rosado opened his first restaurant, but Hurricane Maria forced it to close just several months later. He relocated to Miami to work at Bazaar Mar before moving to Fi’lia at SLS South Beach. Now, Rosado has taken the helm at AHU|MAR at Dua Miami, a seafood-forward, wood-fired concept where he reimagines traditional Puerto Rican dishes through a fine dining lens. At AHU|MAR, yuca alcapurrias are topped with land crab and coconut air—flavors that honor his roots and turn the expected on its head. Rosado’s mission is to represent Puerto Rican cuisine with precision and pride.
