It was her grandfather’s blackberry pie that led Hannah Jacobsen to a career in baking. As a kid, she spent hours with him foraging for berries, learning the family recipe, and satisfying her irresistible sweet tooth. After graduating from college, Jacobsen was interested in pursuing a graduate degree in public health, but before jumping right back into school, she returned to her grandparents’ house for the summer, baking pies and fostering a passion for pastry.
In 2015, Jacobsen moved to New York and found a job at Petee’s Pie Company. After a few months, she left the bakery to become an AmeriCorps volunteer at the Ryan-Chelsea Clinton Community Health Center, but the time away from baking inspired her to pursue a career in the kitchen full-time. Jacobsen returned to Petee’s to join their back of house team and learn to bake in a professional kitchen while taking business classes at New York City’s Institute of Culinary Education.
Jacobsen moved back to Seattle in 2017. She got into a few local farmers markets and began growing her business, baking pies in a commissary kitchen space and launching a monthly pie club, which quickly garnered a loyal local following and kept her afloat through the pandemic. Jacobsen opened her brick-and-mortar location in August 2025. At Pie Bird Bakeshop, she is supplying the community with clever, comforting pastries made from locally sourced ingredients—from savory pot pies to sweet, fun-sized raspberry pocket pies. Now, with her pie club at over 250 members and a brand new space, Jacobsen is fostering the growth of her team, opening up her kitchen to other commissary bakers in the area, and satisfying sweet tooths all over the city.
