Gabriela Holzer originally studied fine arts in college, but she soon found herself drawn to an unexpected art form: hospitality. After graduating from the University of Michigan, she got a job at Heidelberg in Ann Arbor, Michigan, a bustling German restaurant and dive bar. She worked as a server around Ann Arbor until she relocated to Cleveland in 2017. Holzer joined the team at Tremont Taphouse as a bartender, where she was captivated by the art of hospitality and developed an interest in cocktails after her manager took her under their wing. Over the next few years, she expanded her skill set, fell in love with the intricacies of cocktail making, and began participating in numerous cocktail competitions. After a year-long stint at Porco and some time at Cloak & Dagger, Holzer got in touch with Bartender Eric Scott, one of the partners at Thyme Table in Bay Village, to host a springtime cocktail pop-up. But, when the pandemic arrived, her plans were put on hold.
Once lockdown restrictions began to lift, Holzer was invited by Scott to join the Thyme Table team full-time. As lead bartender, Holzer has curated a menu that highlights another passion of hers: tea. Drinks like her Chai A Little Tenderness— with masala chai-infused vodka, ume liqueur, cinnamon gomme, lemon, egg white, and salted plum dust—meld the aromas and tannins of tea with global cocktail ingredients. Now, Holzer is in the process of opening her own intimate bar and restaurant, Hereafter, with a cocktail program steeped in intentionality and nuance that will emphasize the careful practice of mindfulness.
