Zach Halfhill and Alex Humbrecht
Guerilla Bizkits | Nashville TN

One might think there's nothing punk about a soft, buttery Southern biscuit, but Alex Humbrecht and Zach Halfhill's vegan biscuits are all of those things, and are also pretty punk. Halfhill moved to Nashville, Tennessee in 2014 to work as an art director. The two met while Humbrecht was working at The Grilled Cheeserie in 2018, first as a milkshake barista and later as a commissary prep cook under Chef Crystal De Luna-Bogan, learning how to cook from scratch and at a high volume. In March 2020, when Nashville experienced the double-whammy of a tornado and then a pandemic, Humbrecht and Halfhill, furloughed from their jobs, started making vegan biscuits at home and bringing them to friends. A small circulation turned into a bigger following and before long, a local farmers market asked Guerilla Bizkits to join on.
In 2021, the couple opened their brick-and-mortar, and have since collaborated with local businesses to do vegan takeovers at restaurants like Babo Korean Bar, a Korean small plates restaurant. Above all, they have folded activism and sustainability into every aspect of their business, from providing gender affirming post-operative care kits to working with nonprofits like Abortion Care Tennessee and Support + Feed. They also provide resources for harm reduction in their storefront. Humbrecht still makes their vegan "bizkits" the old fashioned way—shredding vegan butter and mixing the dough by hand. They have three signature flavors and rotate a monthly special, often based on what's seasonal and what's exciting, translating classics like Nashville hot chicken into its vegan bizkit alter ego with a punk nickname (The Burnout) to match.
