At 18 years old, Micaela Victoria moved from her hometown of Puerto Madryn in Patagonia, Argentina to Buenos Aires to study international commerce at university. While pursuing her degree, Victoria learned to cook for herself and started to develop an unexpected love for pastry. She graduated and spent time working at a bank before saving up enough money to enroll at pastry school. After a year of culinary school, Victoria made her dreams a reality: She moved to Paris, learned French, and enrolled in the École de Boulangerie Pâtisserie de Paris to study pastry. During her time in France, Victoria worked at local pastry shops and also took courses at the École de Paris des Métiers de la Table, where she learned to work with chocolate. 

In 2019, Victoria moved to Houston. She joined the team at Magnol French Baking before deciding that she wanted to learn more about working in restaurants. Victoria spent time in kitchens across Houston, gaining an understanding of service and tackling more plated desserts and pastries. After a few years, she found her way to Goodnight Hospitality and took over as the executive pastry chef for the group in 2024. Victoria oversaw the group’s four Houston concepts, flexing a wide range of creative muscles, developing specialized desserts for each menu, and managing a large team across several locations. Now, she is gearing up to open a concept of her own, drawing on her varied experiences to bring more personal, refined, and technique-driven desserts to the city.
