As a child, Chris Cote wanted to be an actor, but as he grew up, his passion for cooking slowly outweighed his dreams of taking the stage. He got his start at Max Downtown in Hartford, CT, where he discovered the equally theatrical world of restaurants. Transitioning to the kitchen, Cote worked the line throughout high school and ultimately made the decision to pursue cooking professionally. In 2013, he graduated from the International Culinary Center in New York City. He joined the team at Colonie as chef de partie under Rising Stars alum Andrew Whitcomb, whose attention to sourcing left a lasting impression on him. In 2016, Cote moved on to Rebelle, working alongside Chef Daniel Eddy, before traveling abroad to stage at Noma in Denmark. Returning stateside, Cote joined the team at Aska under fellow Noma alum Fredrik Berselius. He stayed on for five years, working his way up to chef de cuisine.

In 2021, Cote began hosting his pop-up, Hermit, spotlighting foraged ingredients. When he heard through a mutual friend that Chef John Coppola planned to open up a small atelier in Brooklyn, Cote was eager to get back into a permanent role. Coppola and Cote opened Pearl Street Supper Club in 2022. At the 10-seat chef's counter, guests are encouraged to eat, relax, and chat with Cote as he serves refined, New American cuisine, inspired equally by his professional culinary experiences and his New England upbringing. Dishes like his cranberry beans, parsley butter, spearmint, and white vinegar evoke his grandmother's signature baked beans in concert with his Scandinavian influences.
