Mahón-Menorca PDO Cheese is a cow’s milk cheese that originated on the island of Menorca off the northeast coast of Spain. It is a pressed paste cheese, with a square shape and rounded edges. The cheese is made using milk from Menorcan cows. The wind, humidity, and light of Menorca are responsible for giving the cheese its particular, intense, and unmistakable flavor. The rind, rubbed with a mixture of oil and pimenton, is typically orange-colored, while the cheese itself is cream-colored. When mature, it has a firm to hard texture, with a sharp, salty flavor due to the seawater flavoring the grasses on which the cows graze.?
