Mahón-Menorca PDO Cheese is a cow’s milk cheese that originated on the island of Menorca off the northeast coast of Spain. Mahón-Menorca PDO are pressed paste cheeses, with a square shape with rounded edges and corners. They have the natural flavor of the island, declared a Biosphere Reserve by UNESCO. The cheese is made using milk from Menorcan cows and a method of millenary tradition. The wind, humidity, and light of Menorca are responsible for giving the cheese its particular, intense, and unmistakable flavor. The rind, rubbed with a mixture of oil and pimenton, is typically orange-colored, while the cheese itself is cream-colored. When mature, it has a firm to hard texture, providing a sharp, salty flavor from the seawater flavoring the grasses on which the cows graze.?
