8. Recipe for Grilled Salmon a la Tapenade by Chef Anthony Raggiri of Bistro 61 - New York, NY
Adapted by StarChefs.com
Yield: 4 Servings
Ingredients: 3 Tablespoons olive oil 2 ounces garlic, chopped 3 red peppers, julienned 1 large yellow onion, julienned 4 6-ounce salmon filets Canola or olive oil, to lightly coat filets Sea salt or kosher salt and freshly ground pepper 4 Tablespoons black olive paste 1 lemon, cut in wedges
Method: Heat the olive oil in a medium pan and saute garlic, red peppers, and onions for about 8 to 10 minutes, stirring occasionally. Brush salmon on all sides with olive oil and season with salt and pepper. Preheat grill to medium heat and grill salmon for 2 minutes before turning on a 45 degree angle - not turning over. Cook for 2 more minutes then turn over and cook to desired temperature. During last few minutes of cooking, brush the fish with black olive paste. Serve salmon over vegetables, with lemon.
