Spicy Tequila Marinated Shrimp

Yield: 3 servings

  • 1 pound jumbo shrimp, peeled and deveined
  • 1½ cups tequila, preferably 100% blue agave
  • 1½ cups fresh lime juice
  • ¾ cup extra virgin olive oil
  • ½ cup fresh garlic, finely chopped
  • ½ cup Louisiana hot sauce, or the Tabasco sauce of your choice
  • ½ cup sugar
  • 4 Tablespoons kosher salt, or to taste
  • 5 Tablespoons white pepper

Mix all ingredients very well. Marinate shrimp for 2-3 hours in mixture. Cook over charcoal barbecue grill, basting 2-3 times with marinade.
