Chef Rathbun's Tips

When grilling, always cook over a hot grill. Always clean the grill very well and oil the grates with a vegetable oil right before placing the food on it. When using wood, try to use mild wood, such as hickory or oak, unless of course you're in Texas where we use Mesquite. Also try adding more aromatic woods, such as cherry or applewood.
