This heart-warming steamed broth should impart health to lovers. Shiso is a Japanese variety of mint which imparts a fresh, bright taste to this special dish. Chawan Mushi is part of Chef Gilmore's special Valentine's Night 1999 Menu. The menu also includes: Oysters Poached with Caviar, Curry-cured Salmon with Salmon Roe and Pickled Leeks, Foie Gras with Star Anise, Miso Marinated Striped Bass, Grilled Tenderloin of Beef with Truffled Mashed Potatoes and more.

Yield: 10 cups, 5 ounces each


  • 8 cups of chicken or duck stock
  • 8 whole eggs
  • 2 and one-half ounces of soy sauce
  • 2 tablespoons of finely chopped shiso leaf

    Whisk together all ingredients except the shiso and strain. Top with the shiso leaf. Steam for approximately eight minutes in a bamboo steamer in special chawan mushi cups or five ounce cups covered tightly with plastic wrap.
