Verdelho Madeira Cobbler: Madeira, Gum Syrup, Thyme, Strawberry, and Citrus Peel

3 ounces Rare Wine Co. Savannah Verdelho Madeira
½ ounce gomme syrup
2 sprigs thyme
orange peel


Combine the Madeira and syrup in a cocktail shaker with ice and shake briefly, 3 to 5 seconds, depending on the integrity of the ice. Strain into a cobbler tin overfilled with cobbled ice in a circular motion so that all the pebbles become tinted. Insert two long straws and garnish elaborately with thyme and strawberries. Express the orange peel over the surface of the ice and run up the length of the straws; garnish the drink with the expressed peel.
