2 eggs

All-purpose flour for shaping
Chicken Katsu:
(Yield: 6 servings)
500 grams Kikkoman mirin
200 grams brown sugar
75 grams sliced ginger
50 grams 2-inch scallion batons
15 grams Szechuan peppercorns, crushed
25 grams crushed garlic
1 kilogram Kikkoman tamari soy sauce
6 five-ounce portions chicken breasts, butterflied
1 quart all-purpose flour
10 eggs, beaten
2 quarts Kikkoman panko breadcrumbs
Curry:

1 kabocha squash, halved and deseeded
Olive oil
400 grams small diced white onion
250 grams small diced carrot
250 grams small diced russet potatoes
30 grams Madras curry powder
