Piña Colada

Yield: 1 cocktail
INGREDIENTS:
3 ounces light rum
1 ounce fresh lime juice
1 ounce simple syrup
1½ ounces fresh pineapple juice
1 ounce fresh coconut purée
12 ounces cracked or crushed ice
METHOD:
Combine rum, lime juice, syrup, pineapple juice, coconut purée, and ice in a Vitamix Quiet One. Blend on program 2 for about 12 seconds.
