A New Culinary Concept Assigns Musical Notes to Food

Manoir Hovey’s Gastronomic Recital Features Menu Paired with Live Music Performance

North Hatley, Quebec, April 5, 2016: A new culinary experience at Manoir Hovey, a five-star Relais & Châteaux hotel in Quebec, is exploring the relationship between food and music in a unique and interesting way, with a Gastronomic Recital featuring musicians from the Montreal Symphony Orchestra on Friday, April 8th.

The culinary team at Manoir Hovey’s Le Hatley Restaurant has interpreted the flavor characteristics of about 60 ingredients, assigning each a corresponding musical note. From this, they’ve created a five-course menu that will correspond to two classical compositions to be performed by a string trio from the Montreal Symphony Orchestra.

A unique treat for the senses, each ingredient on the menu has been selected to harmonize with the notes from Schubert’s String Trio in B Flat Major and Mozart’s Divertimento in E Flat Major, interpreted and performed by Olivier Thouin (violin), Sylvain Murray (cello), and Victor Fournelle-Blain (viola) from the Montreal Symphony Orchestra. Wine pairings by Manoir Hovey’s sommeliers will enhance the overall experience.

“The concept of a Gastronomic Recital was suggested by Joris Larigaldie, one of the chefs on our culinary team, who realized, while watching a symphony performance, that there is a strong relationship between music and food,” said Chef de Cuisine Francis Wolf.  “We’re excited to bring this concept to life for our guests at Le Hatley Restaurant.”

As Chef Larigaldie explains, “Acidity, sweetness, a high or low pitch – these characteristics can be used to describe both musical notes as well as different foods. And just as each section of an orchestra plays different notes to create a musical masterpiece, the flavor notes in a dish also blend harmoniously to create a beautiful symphony of flavor.”

Manoir Hovey’s Gastronomic Recital, the first in what the hotel hopes will be a series, will begin with cocktails at 6:30 p.m. in the Tap Room Pub.
