Asiago PDO is produced in the Asiago region of northeastern Italy. Under strict production guidelines that have been handed down through generations, Asiago PDO is one of the most ancient cheeses in the world. Asiago Fresco (fresh) has a smooth texture while Asiago Stagionato (aged) can be aged anywhere from four to over fifteen months. All Asiago PDO is produced using the highest-quality cow's milk.
