Fried Rice Battle at StarChefs Congress

For the fifth year, StarChefs Congress will host four of the country's best chefs and their picked crews in a battle royale on the main stage. This year's theme: Fried Rice. Fried rice as a format for self expression, fun, and flavor has been embrced across the country—from high-end to casual dining, across any and all cuisine categories.
 
The Fried Rice Battle takes place October 29, from 2 to 2:45pm at the 14th Annual StarChefs International Chefs Congress. Teams will be led by:

The Battle is judged by a panel of industry judges including Edward Lee of 610 Magnolia, Nicole Ponseca of Jeepney, Marcus Samuelsson of Red Rooster, and Christine Lee of CY Eats
 
Judging
 
Judging is based on the following criteria: Flavor, Texture, Craveability, Creativity (Wow Factor), and use of Kikkoman ingredients. 
 
General Competition Information
 

The Fried Rice Masters and their teams will prepare signature Fried Rice from two 12-inch woks, a 36-inch flattop, and their choice of three specialty ingredients. The fried rice must contain at least two Kikkoman products. StarChefs will provide all remaining pantry items.

Day 1 - Prep Day
Fried Rice Masters and their teams will meet for a two and a half hour prep period. You'll steam, chop, make sauces, and prepare mise for 100 portions 1- to 3-ounce tasting portions. 

Day 2 - The Competition
Behind the scenes, teams will prepare fried rice for fellow Congress attendees. When the battle begins on the main stage, teams will prepare four plates of fried rice for the panel of judges. In a 10 minute window, teams must try the rice, cook the proteins, and assemble the final product.
