Let's get ready to ramen!

Noodles are going to fly at this year's highly anticipated Ramen Battle. Five of the country's top Ramen Masters will lead a small team of participants in a two-day long workshop that will culminate in an epic ramen-off on the International Chefs Congress Main Stage. So grab your chopsticks and an ice-cold Asahi, because it's time to join the ramen revolution! 

The 2015 Ramen Battle will take place October 26-27, 2015 at the 10th Annual StarChefs.com International Chefs Congress. Teams will be led by Ramen Masters Jamison Blankenship of Bar Chuko (Brooklyn, NY), Youji Iwakura of Snappy Ramen (Somerville, MA), Harold Jurado (Chicago, IL), Richie Nakano (San Francisco, CA), and Mihoko Obunai of Mibo Ramen (Atlanta, GA) and be judged by Chefs Katsuya Fukushima of Daikaya (Washington, D.C.), Tim Cushman of O Ya (New York, NY), Wylie Dufresne (New York, NY), Adam Sachs of Saveur (New York, NY), Isao Yamada of Brushstroke (New York, NY), and others. All attendees of the event are eligible to sign up for the Ramen Battle Workshop and compete, but spaces are limited to 25. 

How to Compete

  • Buy a ticket to the 10th Annual StarChefs.com International Chefs Congress
  • Sign up for the Ramen Battle Workshop. Only 25 slots are available on a first come, first served basis.
  • Participants will be divided into 5 teams of 5. Each will be led by one Ramen Master who will act as supervisor and coach. 

Day 1

It all starts with a nice broth. Day 1 is for prepping. Sharpen your knife and simmer those bones! All prepping has to be done at the workshop space.

Day 2

Time to join Battle Stadium (aka the Main Stage), where approximately 300 spectators will be watching your every move. Each team will transform its prep from Day 1 into a luscious bowl of bone-licking goodness for viewers and judges to taste. The team with the best combination of broth (ingredients provided by Kikkoman and Roland Foods), noodles (provided by Sun Noodles), proteins (provided by Fossil Farms and Master Purveyors), and toppings will snatch the victory.


1 Grand Prize winning team will receive:

  • Knives by Takamura
  • Gift certificates for two at Ramen Lab by Sun Noodle
  • Korin grill by Kikkoman

All 25 participants will receive:

  • Ramen knowledge and a burning passion for noodles.

General Competition Information

Who: Katsuya Fukushima, Tim Cushman, Jamison Blankenship, Youji Iwakura, Harold Jurado, Richie Nakano, Mihoko Obunai, and 25 Workshop Participants

Where: 10th Annual International Chefs Congress

What: 5 Master Chefs with 5 team members will create a ramen dish and compete on the Main Stage. Day 1 is for prep only, while Day 2 is the competition. There will be 300 guests watching and each team will have to provide 50 sample size portions of the ramen for guests and 4 additional samples for judges.
