A graduate of the New York Restaurant School, Vera Tong has been critically lauded for her inventive pastries at Dovetail. Her menu is rooted in classics served with a twist, marrying the sweet and savory, with results that are both exciting and wholeheartedly delicious, in an addictive, homey way.

Following pastry experience at Le Madri, The Russian Tea Room, Beppe and Sushi Samba, Tong joined John Fraser at Compass, and the two have been working together ever since. Dovetail is imbued with their personal culinary philosophies – for Tong, this means fun flavor combinations, like avocado-chocolate-strawberry, or breakfast flavors appearing in an elegant dessert form. Her secret dessert superpower is accessibility – no matter the flavor or form, her desserts are first-and-foremost delicious, and manage to feel classic despite their modern components.
