Thomas Collaro is no stranger to the food industry. He used to work among the ranks of line cooks before he exited the kitchen and jumped (cautiously) into food safety. Collaro is now a Senior Investigator for the Food Safety and Inspection Service, which is the public health agency within the United States Department of Agriculture. The agency is responsible for ensuring that the nation’s commercial supply of meat, poultry, and egg products is safe, wholesome, and correctly labeled and packaged. His everyday duties include investigating violations of the meat and poultry inspection laws, controlling violative products through detentions, civil seizures, and voluntary recalls, and helping ensure that appropriate criminal, administrative, and civil sanctions are carried out.
