Chef Robbie Nicolaisen of Waterscapes at the Marina Inn - Biography

Robbie Nicolaisen’s passion for food was fostered during his childhood working on his family’s farm just outside of Asheboro, North Carolina. He harvested crops and canned and preserved fruits and vegetables with his mother and grandmother. When he was older he worked with his chef father at several family owned restaurants in Raleigh where he inspired to pursue a career in the culinary industry. A graduate of Johnson and Wales University in Charleston, Nicolaisen was an executive chef with Hilton hotels and worked at the Charleston Harbor Resort & Marina, the Sea Trail Golf Resort in Sunset Beach, and Shoals Club at Bald Head Island before becoming executive chef at WaterScapes. He’s also passionately involved with, Southern Foodways Alliance, & the James Beard Foundation and is an honorary member of Chaine des Rotisseurs.
