Pastry Chef Melinda Dorn of L'Etoile - Biography

Back in 1996, when Pastry Chef Melinda Dorn graduated from the culinary program at the Atlantic Cape College in New Jersey, she was on the fence as to whether her heart lied in the savory and pastry kitchen. For the next decade she alternated between both sides. But in 2009, Dorn decided to pack all her energy and creativity into pastry. Determined to truly master her craft, Dorn studied at the then DCT School of Hospitality in Lucerne, Switzerland. Back in the States, Dorn was on the move, travelling from kitchen to kitchen gaining evermore technique and experience—from Boston and Boulder to Seattle and even Auckland, New Zealand where she honed her patisserie skills at the award-winning Mudbrick Vineyards.

Dorn is currently a pastry chef at L’Etoile and Graze in Madison, Wisconsin, overseeing the dessert menus at both establishments. She finds inspiration in both working with Chef Tory Miller and the fresh ingredients Wisconsin has to offer.
