Chef Maurizio Ferrarese of Quattro at Four Seasons Hotel Houston - Biography

A native Italian (and former soccer player) ensconced in the Houston dining scene, Maurizio Ferrarese was born and raised in the small town of Vercelli in the Piedmont region of Italy, sandwiched between Milan and Turin. From the romance of idyllic Italy all the way to Quattro at Four Seasons Hotel Houston, Ferrarese is the professional culinary version of a Spaghetti Western—he showcases local resources with an Italian slant.

Ferrarese worked throughout Europe and the United States with the Four Seasons, starting his career as senior chef de partie at the Four Seasons Hotel Canary Wharf in London in 2000. His next stop landed him in the decidedly sunnier terrain of California, where the chef held positions at Aviara, followed by Four Seasons hotels in Chicago and Hualalai, Hawaii.

A promotion to executive sous chef took Ferrarese back to Europe’s Four Seasons Hotel Budapest. Next, he moved back home to his native country, Italy, where he opened the new Four Seasons Hotel in Florence. The comforts of home kept Ferrarese content until his next posting, thousands of miles away in the much younger, swagger-happy city of Houston. Now established at Four Seasons Hotel Houston, Ferrarese incorporates his years of international travel with a native’s passion for Italian ingredients and rigorously practiced techniques into Quattro's authentic menu.
