Manuel Trevino’s mother’s reluctance to cook new dishes motivated him to get in the kitchen. Wanting to try new foods, Trevino was four years old when he started constructing salads, and by seven, he was cooking on the stove. After graduating from St. Mary’s University in San Antonio with a bachelor’s degree in business, Trevino pursued a culinary degree at the New England Culinary Institute. In 1998, he moved to New York City and worked as a line cook at Sirio Maccioni’s famed Le Cirque. He then moved to Babbo, working his way from line cook to executive sous chef over the course of two and a half years. Trevino took his first executive chef role at Naples 45 Ristorante e Pizzeria in 2002, but departed a year later to join the team at Dos Caminos, where he was executive chef for four years.

In 2008, Trevino took a break to film season 4 of Bravo’s “Top Chef” in Chicago. Returning to New York, he moved into the world of Gotham nightlife, working for nightclub Travertine, buzzy hot spot Lavo, and trendy hotel Dream Downtown. In 2014, Trevino joined the team at ESquared Hospitality as the corporate executive chef, helping to launch their first fast casual brand in 2015, vegan chain by Chloe. The chef-driven, plant-based eatery now has 14 locations across 5 cities.
