Chef Katianna Hong of The Charter Oak - Biography

Born in Korea and raised in upstate New York, Katianna Hong pursued gymnastics as a child and trained as a Junior Olympian. After high school, she pivoted to the culinary world and enrolled at the Culinary Institute of America and then the University of Las Vegas School of Hospitality. While still in Vegas, she found her fi rst role in the kitchen as a cook at B&B Ristorante and then DJT Restaurant in the Trump International Hotel. In 2009, Hong moved to Santa Monica, California, and joined the team at Chef Josiah Citrin’s two Michelin-starred Melisse.

In 2011, Hong relocated to Napa Valley to work as a line cook at The Restaurant at Meadowood, climbing her way up to sous chef and then the restaurant’s first-ever chef de cuisine, alongside Chef Christopher Kostow. She became the only female to hold the position at a three Michelinstarred restaurant in the United States. In 2015, Hong was honored as “Rising Star Chef”by San Francisco Magazine for her work.

Hong currently serves as executive chef at The Charter Oak in St. Helena, California, where her wood-fi red, family-style cooking has received numerous accolades, including a James Beard nomination for “Best New Restaurant” in 2018. She was recently honored as one of Food & Wine’s “Best New Chefs.”
