After graduating from Princeton, Erin Byrne spent the next five years in consulting, focused on marketing and growth strategy for pharmaceutical companies. Recognizing how constraining big brands can be, she set out to find an opportunity to build a brand from its infancy. Fresh from a culinary sabbatical in Asia and the U.S., Byrne allied with Swartz and Davis to launch Eastman's first store. As Chief Marketing Officer, Byrne's roles in the company span marketing, public relations, partnerships, catering, and technology.

Today, the Chicago entrepreneurial trio is serving the Windy City the best possible breakfast (in under five minutes) one sandwich at a time—with plenty room to grow. For their efforts, they earned a 2015 StarChefs Rising Star Concept Award.
