Pastry Chef David Chow of David H. Chow Chocolates & Confections - Biography

As a young math and science whiz, David Chow decided to pursue a degree in computer engineering from the University of Waterloo in Ontario, Canada. But he had always enjoyed cooking and took on the responsibility for feeding his family after his mother received a cancer diagnosis. Chow learned what it meant to cook with love and brought joy to loved ones during a difficult time. After completing his engineering degree, he enrolled at Le Cordon Bleu in his hometown of Ottawa and applied his technical background and homegrown culinary skillset to a career in pastry.

Soon after graduating with a degree in patisserie and French pastry, Chow joined the Trump International Hotel & Tower in Toronto as the executive pastry chef. He then traveled to Nassau, Bahamas and spent a year as the pastry chef at the Albany luxury resort community, a property owned by Tiger Woods, Ernie Els, and Justin Timberlake. Longing for home, he returned to Toronto and spent seven years as the executive pastry chef of the Drake Hotel.

He now runs David H. Chow Chocolate & Confections out of his cousin’s cafĂ©, The Eatery, where he dreams up bonbon fl avors like mango-habanero, smoky honey and Scotch, and cherry negroni. His chocolates are stocked in nearly half a dozen locations in Toronto and can also be purchased wholesale through his website.
