Saengran: Ginger Balls, Honey, and Ground Pine Nuts

INGREDIENTS:
200 grams ginger
3 cups water
200 grams sugar
3 tablespoons honey
2 cups ground pine nuts
½ cup whole pine nuts
METHOD:
Clean the ginger and grate it onto a cheesecloth. Squeeze the excess water out of the ginger. Combine the ground ginger with the water and sugar in a small pot over low heat. Simmer the mixture. Add the mixture to the honey and reduce to a syrup. Mix the ground pine nuts with the honey syrup and shape the mixture into date-shaped balls. Serve coated in the pine nuts.
