This is a recipe from our program (one of my absolute favourites. Probably because it's my own ; ) ). Thought y'all might enjoy it!

A mild chili for cool Autumn afternoons.

1 Lb. Hamburger
2 Small Shallots
1/2 tsp. crushed red pepper
1 Can tomato sauce (16 oz.)
Chili Powder
2 Tbsp. Chives
Garlic or Garlic salt
2 cups grated cheese (choose your favourite!)
(recommend: Swiss)

Finely chop the shallots and set aside.
Brown hamburger in a skillet adding salt, pepper and basil. When done, drain
the grease and set the hamburger aside.
In a large pot over medium heat combine the tomato sauce, the hamburger,
the red pepper and the garlic (to taste).
Stir in the chopped shallots and chives.
Stir in a small pinch of salt, and add the pepper to taste.
Add a pinch of chili powder and about a teaspoon of basil.
If chili becomes dry add a few tablespoons of water and mix in well.
As the chili nears completion, stir in a bit of the grated cheese to thicken
the sauce a bit. Place the remainder in a bowl to sprinkle over the chili
when serving.

For a BIG spicy kick, chop ONE (1) small habaņero pepper choped into very
tiny slivers.

This is one for the 40+ recipes in our program. Our program is a recipe
database and organizer so you don't have to spend each evening sorting
through a box of recipe cards. It keeps everything on the computer and easy
to find. It also prints out the recipe in an attractive, easy to read
format. Take a look if you'd like more info!
