In addition or reiterating...pastry first, then cooking is the way its done in France. You cannot be a Grand chef if you don't have any baking skills.
Makes sense as baking is the foundation of cooking.
I did pastry for meny yrs then switched over and it came easily.
Why anyone is appppallled by anything , especially kitchen folk is beyond me.
PS, the grossest stuff I've heard was by the gals, maybe they were trying to hard to act like the guys.
