I would strongly recommend thatyou spend a little time working in aprofessional kitchen before you decideto undertake the expense and risk of opening up your own restaurant.Business smarts are good, too,but the restaurant business is like NO OTHER. The market is differentas is the clientele. You` be surprised by how many others with your smaecredentials and drive end up broke and out of business because theyopened a restaurant looking for glamour or independence or both.That said, yours is exactly the type of attitude that you have to haveto succeed. Do your homework and good luck!
