You may have "" the restaurantwas clearly empty at 5:30. I own arestaurant and we always guarantee our tables based on at 1-1/2 to 2hourturnaround. If you walk in at 5:30 and see most of the tables open, theymay be booked in the next 30 minutes to 1-1/2 hours. I will not seatpeople, especially walk-ins, and expect them to be finished in an hour.That` impossible in a fine-dining atmosphere. And if they don` finishin time for the 6:30 reservation, why should the customers who had takenthe 30 seconds to call for their reservation, have to wait for theirtable?
