No wonder you used initials; you're one of those owner types I bet. I don't rush. I don't sweat. Economy of motion. There is never a reason to fly through the dining room or around corners. All it does is give you a chance to run into me carrying food that the kitchen has taken entirely too long with, causing the Chef to that thing that all Chefs learn somewhere; freaking the hell out!
