Restaurants make most of their money on the "" items you purchase -- noton the main dish. The beverage cost as compared to the food cost in arestaurant is much lower and intended to be that way so that they maymake some profit. A restaurant` bottom line is extremely low. Food &beverage costs are only a fraction of the costs associated with doingbusiness with you. If a restaurant realizes a 5 - 10% profit per yearthat is a lot. Hence a restaurant doing $l million a year will onlyrealize $50,000 to $100,000 annual profit. They rely on your winepurchases etc. make that a reality.
