Ingredients:
Wasabi Cream:
- 2 Tbsp cooked sushi rice
- 2 Tbsp mascarpone cheese
- 1 Tbsp crème fraiche
- 1 tsp parsley oil
- 2 tsp lime juice
- 1 tsp wasabi paste
- Kosher salt and white pepper
Pizza:
- 4 ounces pizza dough
- 1 Tablespoon herb oil
- Sea salt and fresh ground pepper
- 3 Tablespoons wasabi cream
- 3 Tablespoons julienned cucumber
- 2 ounces jumbo lump blue crab meat
- 2 ounces sashimi grade Ahi tuna, sliced into thin 1-inch
squares
- 6 slices of ripe avocado
- 2 Tablespoons celery leaves
- 1 Tablespoon tamari soy
- 1 Tablespoon lemon juice
- Nori power
Method:
For the Wasabi Cream:
Combine all ingredients in a mixing bowl and season with
salt and pepper.
To Assemble and Serve:
Preheat oven and pizza stone to 500°F. Roll out the
pizza dough and cut into a 7-inch square with a pizza cutter.
Brush the dough with herb oil then season with sea salt
and fresh ground pepper. Slide the dough onto the preheated
stone in the oven. Cook until golden brown and crispy, about
5 minutes. Remove from the oven and spread the wasabi cream
on top. Place a layer of cucumber, crab, tuna, avocado and
then celery leaves. Season the pizza with tamari soy and
fresh lemon juice. Garnish with nori powder. |
