Singer: Founder of Libation Education, Brookline, MA

David Singer is the founder
of Libation Education, a Massachusetts-based education and
consulting business serving oenophiles and restaurateurs.
He offers classes for corporations, private groups and restaurant
staff. In addition David offers restaurant consulting services
for proprietors seeking to optimize their wine program.
Prior to launching Libation
Education, Singer served as the wine director of Mantra in
Boston. Despite having worked his way up at a number of prestigious
restaurants, such as Veritas and Le Cirque 2000 in New York,
and the Windsor Court Hotel in New Orleans, he remains down-to-earth
and unpretentious about his passion. At Mantra, for example,
he developed an exciting beer list alongside his wine program.
David felt beer particularly suited to the restaurant’s
French-Indian cuisine – especially the spicier dishes
– so he didn’t let it remain just a down-market
afterthought.
In his 20s David abandoned
his political science and psychology studies to enroll in
the sommelier program at George Brown College, a Canadian
hospitality school. He graduated with honors and aimed high
for his first job, sending out inquiries to every restaurant
on the Wine Spectator’s Grand Award list. Dan Perlman
at Felidia in Manhattan took him under his wing
as Assistant Sommelier, and Dan’s mentorship was invaluable
to David in learning the practical side of the trade. Now
he has taken up the mantle of educator himself, devoted
to training restaurant staff as well as educating the public.
Having achieved
one major goal of launching his own company, David still
has one other goal on the horizon: the MS. He’s already
passed the Advanced Exam, so the final exam looms. He also
just returned from his honeymoon, so he has a lot on his
plate – but he seems ready to pair it all together
very well.
