Below is Bar Demi’s innovative tiered tasting menu for autumn 2000, with wine pairings. The à la carte section of the menu has been omitted. While the menu features distinctive graphic design by Charles Nix, we regret that it is not practical to reproduce it here.

 

The Oyster Challenge

Every year the world of wines re-engages the great challenge: Who makes the best wine for oysters? Classics, such as Champagne and Chablis come to mind, and the herbaceous wines always make a strong argument.

An hors d’oeuvres-style tasting of charcuterie-style snacks, cheeses and dessert selections paired with a seasonal wine suggestion. All tiers are recommended for two people and each dish is also available à la carte. For Autumn we highlight Sherry, Chardonnay, Grenache and Sauvignon Blanc.

The Sherry Tier

Sherry remains one of the world’s most under-appreciated wines, but is certainly a triumphant choice to serve with food. These fortified wines from the southern tip of Spain represent great value and perform beautifully where still wines are often unwelcome. The selections listed here are dry styles, featuring the ‘Almacenista’ line of individual barrel productions from the Lustau firm. (As an alternative, consider ordering a Riesling from the Wine List.)

The Chardonnay Tier

Chardonnay, as it occurs in its most popular forms, often produces a wine that is best enjoyed on its own. While there are exceptional food-worthy styles of the varietal, this tier caters to all kinds of Chardonnay by focusing on some of those few flavors and foods that showcase the best elements of the wine.

The Grenache Tier

There are few wines that represent a better introduction to Autumn than productions made with Grenache. This varietal is almost always used as a blending grape to impart spice, fleshiness, and woodland flavors to the completed wine. Look for the dark fruit to reveal itself with heartier food.
